About two and a half hours south, in Greenville, Virginia, a woman farmer namd Leslie Hancock is passionate about raising 100% grass fed and finished beef. We caught up with Leslie and asked her to tell us a little about her farm.
SNV: What do you specialize in?
Leslie: Soul Shine Farms beef is 100% GRASS FED from birth to butcher. My cattle are free ranging on grass pastures from birth. In winter they receive all native grass hay made here on the farm.

“I also take the extra step of dry aging my beef. It hangs at a specific controlled temperature and humidity for at least 14 days. You typically do not find this luxury outside of 5 star restaurants mainly because it is time consuming, space consuming, & expensive.”
All supermarket beef is “wet aged” in plastic which artificially speeds up the aging process while also cutting down on beef quality and flavor.
SNV: Do you use organic practices?
Leslie: My cattle are all naturally and sustainably raised with no antibiotics and no hormones. They are raised to beyond organic standards and are never confined in any feedlots.
They eat native grass hay during the winter that is made by me here on the farm without the use of herbicides, pesticides, chemical fertilizers, or ground tilling.
It is much more expensive, and work and time intensive, to raise beef this way. But it’s what we need to get back to. The fast cheap way is not working!
I believe that the growing demand for clean eating, and the more natural paleo diet, will help sustain farmers who are catching on and implementing these vastly better sustainable farming practices.

Once you place your order it will take 1-2 days to process. I ship my beef on Mondays, Tuesdays, and Wednesdays to ensure one day delivery before the weekend.
